An absolute Oolong classic from the Chinese school originated in the 19th century in Anxi in Fujian province.  This light oxidised oolong was harvested and produced in October. Its name translates as "Iron Goddess of Mercy". This tea is beautiful to the taste but is also stunning to the eye, bright green, highly aromatic, leaves rolled into tiny balls which unfurl beautifully.

Tie Guan Yin has more steps when it comes to the production than green tea. The leaves are allowed more time to wither and undergo more intensive steps such as tossing and rolling. The infused liquor is nice and clear, it has got a bright, almost light, emerald green sheen to it. It tastes slightly citrussy and floral with a caramel sweetness

Best brewed for 2-3 mins @ 80-90° C
